- 3 oil tablespoons
- 1 large onion, chopped
- 2 ripe tomatoes, chopped
- 1 red pepper, chopped

- 1/2 cup raisins

Preparation
In a large skillet, heat oil over medium heat. Add the onion, tomatoes, peppers and garlic and sauté for 5 minutes. Add the rice, water, salt and cumin and mix well. Lower the heat to low and let cook for 15 minutes. Add the raisins, almonds and olives, mix well and cook for 5 more minutes.
